Enzymology. A basic enzyme that is present in saliva, tears, egg white, and many animal fluids. It functions as an antibacterial agent. As a glycosidase it hydrolyses the bond between N acetyl muramic acid and N acetyl glucosamine, thus cleaving murein, an important polymer of the cell wall of many bacteria.
