Organic Chemistry. A heterogeneous mixture of proteins that is obtained from the partial hydrolysis of collagen, derived by boiling the skin, bones, and other tissues of animals. Gelatin is soluble in hot water and is used as a thickener and stabilizer in foods, photographic films and capsules for pharmaceuticals.
