Biochemistry. A water-soluble vitamin that is essential in the human diet. It serves as a component of two coenzymes or prosthetic groups of flavoproteins with the function of hydrogen carriers in oxidation-reduction processes. In form of FMN and FAD it is essential for metabolism of carbohydrates, fats and proteins.
