Biochemistry. This gelatinous material is an extract from red algae (Rhodophyceae). Agar is a polymer of galactose units, it dissolves in hot water and solidifies as a gel when it is cooled down again. It is used in solid culture mediums for bacteria, as diffusion medium in electrophoresis, as an emulsifier, as a laxative, and in drug production.
