Biochemistry. Extracellular proteins comprising about one third of the total protein in mammalian organism. Collagen is the main constituent of skin, tendon, bone, cartilage and all other connective tissue. The collagen helix consists of three polypeptide chains. Collagen is converted into gelatin by boiling.
