Enzymology. An enzyme that catalyzes the hydrolysis of peptide bonds within the chain. They are classified primarily by their catalytic mechanism. They comprise the serine proteinases (e.g. trypsin, plasmin, thrombin), cysteine proteinases (e.g. papain), aspartic proteinases (e.g. pepsin) and metalloproteinases (e.g. collagenase).
